Broccoli Salad

Broccoli salad is the perfect meal for lunch or even a snack! Sure, it’s coated in a (delicious) mayonnaise-based dressing, but it’s made with broccoli instead of macaroni or potatoes, so you can go ahead and pile those plates high with this delicious salad. Vegan friendly and it comes together in just minutes!

Ingredients: 

  • 2 heads of broccoli, chopped
  • 1 cup of slivered almonds
  • 1 cup of grapes, sliced
  • 1/2 cup of red onion, chopped

Dressing:

  • 3/4 cup of mayo
  • 2 tbsp coconut vinegar
  • 1 tbsp dijon mustard
  • 1 tbsp balsamic vinegar
  • 1 tsp dried parsley 
  • 1/2 tsp sea salt 

Combine all dressing ingredients in a small bowl. Then mix all salad ingredients. Pour dressing over the top and enjoy!
