Anyone else always in the mood for salsa in the summer? 🙋 This loaded mango salsa recipe can be the perfect meal topped with a piece of protein, a great dip with chips, or clean snack!
INGREDIENTS
- 3 mangoes, peeled and cubed
- 1 large red bell pepper, finely chopped
- 1 cucumber, peeled and finely chopped
- 1/2 a red onion, finely chopped
- 3 radishes, finely chopped
- 1/2 cup of cherry tomatoes, halved
- Bunch of cilantro, finely chopped
- Salt and pepper to taste
- The juice from 1 lemon
DIRECTIONS
- Most of the work is in prepping your vegetables! Once everything is chopped up, combine in a large bowl.
- Add your salt, pepper and lemon juice and mix until well combined.
- Serve immediately or refrigerate and enjoy for up to 4 days.
