Loaded with lean ground turkey, vibrant veggies, and creamy pumpkin, this dish delivers a satisfying, nutrient-rich bowl that supports your fitness goals and keeps you fueled all day long.
2 lbs ground turkey
2 Tbsp avocado oil (divided)
1 large zucchini, peeled and cubed
1 large sweet potato, peeled and cubed
½ large white onion, chopped
1 medium yellow pepper, chopped
1 medium red pepper, chopped
2 cups butternut squash, cubed
1 can pure pumpkin
½ can plain tomato sauce
½ cup water
1 packet of your favorite taco seasoning
Cook the turkey:
Heat 1 Tbsp avocado oil in a large skillet. Add the ground turkey and cook until browned, about 7–10 minutes. Break up the meat as it cooks.
Sauté the veggies:
In a large pot, heat the remaining 1 Tbsp avocado oil. Add onions, peppers, zucchini, sweet potato, and butternut squash. Sauté for about 15 minutes, until softened.
Add flavor:
Stir in the pure pumpkin, tomato sauce, taco seasoning, and water. Mix until well combined.
Combine and simmer:
Add the cooked turkey into the pot and stir until everything is evenly mixed. Turn the heat to low and simmer for 20 minutes to let the flavors blend.
Serve and enjoy:
Top your chili with fresh avocado, chopped cilantro, or a spoonful of salsa for a healthy finishing touch.
