Ingredients:
½ cup old-fashioned rolled oats
½ cup milk of choice
¼ cup plain Greek yogurt
¼ cup sliced strawberries
¼ cup fresh blueberries
1–2 tbsp chia seeds
Directions:
In a jar or airtight container, combine the oats, milk, Greek yogurt, chia seeds, and honey (if using). Stir well to mix everything together.
Add the sliced strawberries and blueberries and stir until evenly combined.
Cover and refrigerate overnight, or for at least 4 hours.
In the morning, stir again and top with extra fresh fruit if desired.
Enjoy chilled or warmed up!

Ingredients:
4 cups watermelon, cut into 1-inch cubes
1 cup fresh blueberries
¾ cup crumbled feta cheese
2 tbsp fresh mint, chopped
Directions:
In a large bowl, add the watermelon cubes and blueberries.
Sprinkle the feta cheese and chopped fresh mint over the fruit.
Gently toss until everything is evenly mixed.
Cover and chill until ready to serve.
Serve cold and enjoy!

1 cup uncooked quinoa (or about 3 cups cooked)
1 cup cherry tomatoes, cut in halves
1 cup cucumber, diced
¼ cup red onion, finely diced
¼ cup crumbled feta cheese
2 tbsp olive oil
Juice of ½ lemon (about 1–2 tbsp)
Salt and pepper to taste
Directions:
Cook quinoa according to package instructions and let cool.
In a large bowl, combine the cooled quinoa, tomatoes, cucumber, onion, and feta.
Drizzle with olive oil and lemon juice.
Season with salt and pepper, then toss gently.
Serve chilled or at room temperature and enjoy!
