Valentine's Day: No Bake Protein Energy Hearts

Valentine's Day is right around the corner, and what better way to celebrate than with this fun and healthy recipe for you & your family!

INGREDIENTS

  • 1 cup old fashion oats
  • 1/3 cup protein powder of choice (I use ancient nutrition vanilla keto)
  • 1/2 tsp. flaxseed oil
  • 1 Tbsp. peanut butter (creamy & soft)
  • 1 Tbsp. almond butter (soft)
  • 1/3 cup organic unsweetened applesauce
  • 1 Tbsp. honey
  • 2 Tbsp. chocolate chips (I use GOOD LIFE vegan)
  • Unsweetened shredded coconut

INSTRUCTIONS



Make sure almond and peanut butter is at room temperature or slightly warmed or it will result in hard chunky pieces that do not stick together well. In a bowl mix together all ingredients. You may sprinkle some unsweetened shredded coconut into the mixture.

For protein balls: Roll into small to medium balls. Roll lightly in shredded coconut. Place on wax paper and refrigerate for 2-3 hours to harden. Or place in the freezer to harden quickly. Store in refrigerator.


For shaped molds: Fill mold by spooning in mixture and using wax paper to press down to compress. Sprinkle shredded coconut over the shapes. Place entire mold tray into to refrigerator for 2-3 hours to harden. Or place in the freezer to harden quickly. Shapes should pop out of the mold easily. Store in the refrigerator & enjoy!
