Healthy Lava Cake

That’s why we’re sharing a delicious molten lava cake recipe that’s health-conscious, paleo, and gluten-free. This will satisfy your sweet tooth without giving up your goals!

Ingredients

  • ⅓ cup refined coconut oil
  • ½ cup vegan chocolate chips
  • 2 eggs
  • 1 egg yolk
  • ¼ cup coconut sugar
  • ½ teaspoon vanilla extract
  • Pinch of salt
  • 1 tablespoon tapioca starch
  • 3 tablespoons almond flour
  • Coconut milk ice cream (for serving)

Instructions

  1. Preheat the oven to 450°F. Grease two 6-ounce ramekins with refined coconut oil and set aside.
  2. Melt the chocolate and oil. Place the coconut oil and chocolate chips in a microwave-safe bowl. Heat for 60 seconds, then stir well. Continue heating in 30-second intervals, stirring between each, until fully melted and smooth.
  3. Whisk the wet ingredients. In a separate bowl, whisk together the eggs, egg yolk, coconut sugar, vanilla extract, and salt until well combined.
  4. Combine mixtures. Gently fold the melted chocolate mixture into the egg mixture. Then stir in the tapioca starch and almond flour until smooth.
  5. Fill the ramekins evenly with the batter.
  6. Bake for 12 minutes, then let the cakes sit for 1 minute.
  7. Release and serve. Carefully run a knife around the edges and invert each cake onto a plate. Top with coconut milk ice cream and enjoy immediately.
