Ingredients
Jasmine Rice (I use the boil in the bag) | 1 Bag* to cook or based on your macros
Slice Thin Chicken Breast | 4oz (but feel free to increase portion based on your macros)
Fresh Lime or Lime Juice | ¼ lime or to taste for lime juice
Fiesta Lime seasoning from Mrs. Dash | enough to cover each side of the chicken breast
Olive Oil | 1/4 teaspoon
Salt & Pepper | to taste
Wholly Guacamole Spicy or Original | ½ of the single-serve
Directions
As you are prepping the chicken boil a pot of water and follow the instructions on the Box for Rice. Get a cutting board and season to taste on both sides of the chicken breast then use the Mrs. Dash Fiesta Lime seasoning enough to cover both sides. Then slice the breast into cubes and prep pan with pam or a non-stick pan and cook medium-high till 165 degrees in the middle or till it is no longer pink in the middle.
The rice when it is done cooking and if needed drained, place in a pan medium to low heat and put the 1/4 tablespoon of olive oil and squeeze lime to get all the juices out or a few lime juice drops to taste, a little bit of Mrs. Dash Fiesta Lime seasoning just a pinch and very tiny salt pinch mix together on low heat till olive oil is evaporated.
I personally portion out ¼- ½ cup for rice from the final product on a plate then put the chicken cubed and then guacamole on top.
