What better way to celebrate Father's Day then with a quick, nutritious meal on the grill? If that special dad in your life is a grill master, you have to try this recipe this weekend!
INGREDIENTS
- 2 Chicken Breasts (or skinless boneless thighs)
- 18 Cherry round tomatoes
- 1 Medium Onion
- ½ Cup of Basil Pesto
- 10 Bamboo Skewers
DIRECTIONS

Prepare bamboo skewers by soaking them in water for at least 3 hours.

Cut your chicken into cubes and season with salt and pepper on both sides.

Cut your onions in halves then fourths.

Add your ingredients into a bowl and let marinate for about an hour or as long as overnight.

Form your skewer in the order of chicken, onion, and tomato, then repeat.

Preheat your grill to 400-425°F.

Oil your grill before using. Place your skewers on the grill and once half the chicken is whiter in color and the other half is a pinkish color, flip it. Cook until the chicken reaches 165°F.
