Recipe 1: Air Fried Sweet Potato Wedges
Ingredients:
- 2 Medium-Sized Sweet Potatoes
- 1 1/2 Tablespoons of Avocado Oil
- Salt and Pepper to taste
- Fresh Parsley for garnish
Directions:
- Peel and slice sweet potatoes into even wedges (about ¼“ strips). Place in a large mixing bowl
- Drizzle potato strips with oil, salt and pepper. Stir until all potatoes are coated
- Drop in the air fryer, and cook at 380 degrees for 14 minutes, turning them over 7 minutes in! Add another 4 minutes after if you like them extra crispy!
- Garnish with freshly chopped parsley
Serve with guacamole, your favorite clean ranch dressing or as a side dish with a lean protein!
Recipe 2: Buffalo Chicken Dip
Ingredients:
- 3 cups shredded rotisserie chicken
- 1 cup avocado oil mayo
- 1/3 cup hot sauce
- 1/4 scallions, chopped
- 1/4 cup nutritional yeast
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp pepper
Directions:
- Preheat your oven to 350°
- Mix all ingredients in a large bowl
- Transfer to a small baking dish and smooth out the top with a spatula.
- Bake for 20 minutes until the top is bubbling or to your desired crispiness on top!
Serve with your favorite raw veggies!
Recipe 3: Guacamole
Ingredients:
- 4 Ripe Avocados
- 1 Fresh Lime
- 1 Large Plum Tomato, diced
- 1 Clove of Garlic, Minced
- 1/4 Cup Cilantro
- 1/4 Cup Red Onion, Diced
- 1 Tsp Salt
Directions:
- In a large bowl, combine the avocados with the juice of your lime. Mash until creamy.
- Add the tomato, garlic, onion, and cilantro in the bowl. Stir until well combined.
- Top with more cilantro and lime juice if you'd like, and enjoy!
Store in the fridge in an air-tight container or with plastic wrap. Serve with your favorite raw vegetables!
Recipe 4: Bacon Ranch Deviled Eggs
Ingredients:
- 3 slices of turkey bacon, chopped
- 6 hard boiled eggs
- 1/4 cup avocado oil mayo
- 1 tsp dijon mustard
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- Salt and pepper to taste
- Chopped fresh chives for garnish
Directions:
- If you're bacon is not pre-cooked, start by cooking the chopped bacon in a skillet over medium heat until crispy. Set aside when complete!
- Slice your hard boiled eggs in half lengthwise. Remove the yolks and place them in a bowl.
- To the yolks, add mayo, mustard, onion powder, garlic powder, salt, pepper, and most of the bacon (reserving 1 tablespoon). Mash everything together until smooth and creamy, then stuff the egg whites with the mixture.
- Top with the reserved bacon bits and chives.
Recipe 5: Vegan Cashew Queso
Ingredients:
- 2/3 Cup Raw Cashews
- 2/3 Cup Water
- 2 Tbsp Nutritional Yeast
- 1/2 Tsp Sea Salt
- 1/2 Tsp Smoked Paprika
Directions:
- Pour filtered water into a small pot, add the cashews, and bring to a boil. Let it boil for 2 minutes, then remove from heat and allow to cool slightly before draining the water.
- Once the cashews have soaked, discard the soaking water.
- Combine all ingredients in a high-speed blender and blend on high for 1 minute until smooth.
Serve with your favorite raw vegetables or grain-free tortilla chips while enjoying the game!
