5 Easy Summer Sheet Pan Dinners

These recipes are made for busy weeknights, slow summer weekends, and everything in between. Pair them with a glass of something cold, and enjoy the peace of mind that comes from eating well—and cleaning up less.

 

1. Lemon Herb Salmon with Asparagus & Cherry Tomatoes

Why you'll love it: Bright, fresh, and done in under 20 minutes.
Ingredients:

  • Wild-caught salmon

  • Asparagus

  • Cherry tomatoes

  • Lemon slices

  • Olive oil

  • Garlic

  • Fresh dill

Instructions:
Toss the asparagus and cherry tomatoes with olive oil, minced garlic, salt, and pepper. Lay them on a sheet pan and nestle in the salmon fillets. Top with lemon slices and fresh dill. Roast at 400°F for 15–18 minutes until the salmon flakes easily.

2. Garlic Shrimp with Zucchini, Bell Peppers & Cauliflower Rice

Why you'll love it: It's light, flavorful, and naturally low-carb.
Ingredients:

  • Shrimp (peeled and deveined)

  • Zucchini

  • Red & yellow bell peppers

  • Cauliflower rice

  • Garlic

  • Olive oil

  • Paprika

  • Fresh parsley

Instructions:
Spread cauliflower rice and chopped veggies on the pan. Drizzle with olive oil, minced garlic, and a sprinkle of paprika. Roast at 400°F for 10 minutes. Add shrimp to the pan and cook for another 10–12 minutes. Finish with chopped parsley.

3. Balsamic Chicken with Summer Veggies

Why you'll love it: Savory, tangy, and loaded with color.
Ingredients:

  • Chicken thighs or breasts

  • Zucchini

  • Cherry tomatoes

  • Red onion

  • Balsamic vinegar (no sugar added)

  • Olive oil

  • Italian seasoning

Instructions:
Marinate the chicken in balsamic, olive oil, garlic, and Italian herbs for 15 minutes (or overnight). Spread chopped veggies on a sheet pan and top with the chicken. Roast at 425°F for 25–30 minutes, until the chicken is golden and cooked through.

4. Chimichurri Steak with Sweet Potatoes & Green Beans

Why you'll love it: It's hearty, herby, and meal-prep friendly.
Ingredients:

  • Grass-fed flank or sirloin steak

  • Sweet potatoes (cut into wedges)

  • Green beans

  • Olive oil

  • Salt & pepper

  • Chimichurri sauce (parsley, garlic, olive oil, red wine vinegar, oregano)

Instructions:
Roast sweet potato wedges at 425°F for 10 minutes. Add steak and green beans, then cook for another 15–18 minutes, depending on desired steak doneness. Drizzle with homemade chimichurri before serving.

5. Coconut-Lime Chicken with Broccoli & Mango

Why you'll love it: Sweet, savory, and just the right amount of tropical.
Ingredients:

  • Chicken thighs

  • Broccoli florets

  • Red onion

  • Mango (diced)

  • Coconut milk

  • Lime juice

  • Garlic

  • Fresh ginger

Instructions:
Marinate chicken in coconut milk, lime juice, garlic, and ginger for 30 minutes. Spread on a sheet pan with broccoli and red onion. Roast at 400°F for 20–25 minutes. Add mango chunks in the last 5 minutes for a fresh burst of flavor.
