Recipe 1: Sheet Pan Pesto Salmon and Asparagus
Ingredients:
- 3 salmon filets
- 1 lb. asparagus, washed and trimmed
- 1 cup of cherry tomatoes
- ¼ cup of your favorite clean pesto
- 3 garlic cloves, minced
- 1.5 tablespoons olive oil
- Salt and pepper to taste
Directions:
- Preheat oven to 425°F.
- Line your sheet pan with parchment paper and spray with oil.
- Lay the salmon on the sheet pan and season with salt and pepper.
- Spread the pesto evenly over the salmon.
- Add the asparagus and tomatoes. Drizzle with about 2 teaspoons of olive oil. Add 2 minced garlic cloves salt, and pepper.
- Bake in the oven for 12-15 minutes or until the salmon is fully cooked (145°F)
- Serve with fresh lemon and enjoy!
Recipe 2: Sheet Pan Chicken and Roasted Veggies
Ingredients:
- 2 medium boneless, skinless chicken breasts, cut into bite sized pieces
- 1 large carrot, chopped
- 1 yellow pepper, chopped
- 1 orange pepper, chopped
- 1/2 a red onion, chopped
- 1 cup of broccoli florets
- 3 tablespoons of extra virgin olive oil
- 2.5 teaspoons of Italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Juice from 1 lemon
- Salt and pepper to taste
Directions:
- Preheat oven to 400°F.
- Line your sheet pan with parchment paper and spray with oil.
- In a large bowl, combine all the chopped veggies and the chicken.
- Drizzle with olive oil. Add the lemon juice, Italian seasoning, garlic powder, onion powder, salt and pepper. Toss to coat.
- Transfer everything to the sheet pan and spread evenly.
- Bake for 20 minutes, or until the chicken is fully cooked through and the veggies are tender. Sprinkle with parmesan and enjoy!
Recipe 3: Sheet Pan Chicken Sausage with Roasted Veggies
Ingredients:
- 1 pack of your favorite clean chicken sausage, sliced
- 1/2 a red onion, chopped
- 1 package of brussel sprouts, cleaned and halved
- 1 sweet potatoes, peeled and chopped
- 3 cloves of garlic
- 2 tablespoons of avocado oil
- salt and pepper to taste
- Fresh parsley for garnish
Directions:
- Preheat oven to 400°F. Place sausage, brussel sprouts, sweet potato chunks, onion and garlic on the baking sheet once chopped.
- Drizzle oil over sausage and veggie mixture, sprinkle on salt and pepper and toss to combine.

Bake in the oven for 15 minutes. Remove the sheet from the oven and toss with a spatula. Then place back in the oven for an additional 10-15 minutes until the sweet potatoes are tender.

Season with additional salt and pepper to taste, fresh parsley, and serve over rice or quinoa!
