Did you know grilling is one of the healthiest ways to prepare food, without all the extra oil and calories? We've composed 3 different recipes for our grill-masters to try this weekend.
Recipe 1: Grilled Chicken Kabobs with Peanut Sauce
Ingredients:
- 2 tablespoons sesame oil
- 2 tablespoons soy sauce
- The juice of 1 large lime
- Black pepper
- 1 pound chicken tenders
For the Sauce:
- 1/2 cup creamy peanut butter
- 1/4-inch piece fresh ginger minced
- 1 minced garlic clove
- 1 tablespoon lime juice
- 1/2 tablespoon fish sauce
- 1 tablespoon liquid aminos
- 1/2 cup water
- Cayenne pepper
Instructions:
- Place the sesame oil, soy sauce, lime juice and pepper in a large baking dish. Mix until well combined. Add your skewers and let them sit in the marinade for about 15 minutes.
- Place all ingredients for the sauce in a small bowl and whisk together until well combined. For a creamy smooth sauce, blend everything together in a food processor.
- Heat the grill to medium-high head. Place the kabobs on the grill until the chicken is fully cooked, about 6-8 minutes per side or crispy to your liking.
- Serve the chicken skewers with the peanut dipping sauce. Enjoy!
Recipe 2: Garlic Parmesan Grilled Eggplants
Ingredients:
- 2 large eggplants, washed
- 1 tablespoon sea salt
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon oregano
- 2 tablespoon grated parmesan cheese
- Chopped fresh parsley for garnish (optional)
Instructions:
- Slice the eggplant into 1/4-inch thick slices. Let them sit on paper towels to dry completely for 10-15 minutes.
- Heat the grill to medium heat.
- In a large bowl, combine olive oil, salt, pepper, garlic powder, oregano, and parmesan. Stir until well combined.
- Coat the eggplant slices in the the garlic/parmesan mixture evenly on each side.
- Grill the eggplant slices 5-6 minutes per side or until you get those grill marks!
- Top with fresh parsley and serve. Enjoy!
Recipe 3: Homemade Turkey Burgers
Ingredients:
- 2 portobello mushrooms, chopped
- 4 tablespoons of avocado oil
- 1 green bell pepper, chopped
- ½ large, sweet onion, chopped
- 1 lb of lean ground turkey
- 1 egg
- 1 teaspoon salt
- 1 teaspoon pepper
- Your favorite burger toppings for serving- lettuce, tomatoes, onion, etc!
Instructions:
- Heat 2 tablespoons of avocado oil in a pan over medium-high heat.
- Add the mushrooms and sauté for 8-10 minutes, letting them sweat and release water.
- Add the bell pepper and onion and continue to stir and let sauté for an additional 5 minutes until they've softened slightly. Remove from heat and let cool.
- In a large bowl, combine the cooled veggie mixture with the ground turkey, egg, salt, and pepper. Mix with your hands until everything is well combined.
- Prepare a cookie sheet with parchment paper large enough for 6 burgers.
- Add some avocado oil to your hands. Divide the meat mixture into 6 sections and form patties with your hands.
- Heat your grill to medium heat.
- Place your burgers onto the grill and cover. Cook 6-7 minutes each side, keeping the lid on as much as possible.
- Once finished, remove from the grill and get ready to assemble your burger. You can put on your favorite toppings and each between 2 pieces of lettuce, your favorite grain or seed bread, or just over a big salad. Enjoy!
